Polish chef to bring royal culinary heritage to Jordan

AMMAN — Maciej Nowicki, the head chef at the Museum of King Jan III’s Palace and one of the most prominent promoters of royal culinary heritage in Poland, is scheduled to visit Jordan next week.

Together with the Polish embassy, he will introduce Polish 17th century historical cuisine to Jordanian food enthusiasts, said a statement from the embassy.

He will reconstruct the favourite meals of Jan III Sobieski, King of Poland and Grand Duke of Lithuania, according to the statement.

The Polish embassy, on the occasion of Poland Independence Day, celebrated on 11 November, organises a series of culinary classes for Jordanians, students of the Royal Academy of Culinary Arts, and representatives of diplomatic institutions. 

The event will take place at the Royal Academy of Culinary Arts in Amman and will be led by Nowicki.

“The culinary classes not only reconstruct cuisine dating back to centuries ago but also represent the latest modern trends. In Poland, we are currently rediscovering our culinary heritage. We are proud of our culture and put a lot of effort into preserving the traditions for future generations,” Poland’s Ambassador to Jordan Lucjan Karpiński said in the statement.

“We are so happy to present them to a broader audience at the occasion of our Independence Day together with chef Maciej Nowicki. Poland is not a kingdom anymore, but our cuisine is still royal thanks to him,” he added.

“The old Polish cuisine is full of contrasts and unusual combinations of flavours. It is an eclectic mix of Western traditions spiced up with Eastern influences,” read the statement. 

Participants of the culinary classes will prepare three courses. A soup with a hundred years of culinary tradition, fish in saffron sauce inspired by the Jan III Sobieski’s menu, and his favourite dessert with a recipe dating back 400 years ago, the statement said.
